The kitchen method
The concept borrows its name from kintsugi: visible repair instead of hidden damage. In the kitchen that becomes a simpler rule—use the whole ingredient, make the process legible, and let char and broth do the heavy lifting.
Stocks are treated as the foundation, not a background note.
Proteins and vegetables get direct char without being buried in sauce.
Pickles, yuzu and vinegar cut through richer bowls and keep the menu moving.
Trim, broth, rice and seasonal vegetables are cross-used to reduce waste.
